What’s the fastest way to reduce farm-to-table distance? Go straight to the source. And Chef Guillermo Tellez, of Hotel Palomar's Square 1682 in Philadelphia, will take you there.
Tellez has set up a network of some 40 farmers, vendors, and producers in Pennsylvania and New Jersey who supply the LEED-certified restaurant with sustainable and organic ingredients. On Saturday, June 12, he will take a group of guests on the first of a series of Farm & Field Trips. Participants will visit the Brandywine River Texas Longhorn Ranch in West Chester, PA where they will tour the property and enjoy an on-site local lunch with Chef Tellez and farmers Marcy and Rob Fenza. Saturday’s menu includes fresh grilled vegetables, grass-fed beef sliders on brioche buns, and strawberry short cake with rhubarb and mascarpone cream.
Tickets cost $35 per person, which includes lunch, beer and wine, the farm tour and hayride, and transportation to and from Philadelphia. If you can’t make it Saturday, Square 1682 hopes to run trips at least four times per year.
